A peach cobbler from the crock pot?  You betcha!

1 1/2  cup sugar
3/4 cup baking mix
2 large eggs
2 teaspoons vanilla
1 (5 ounce) can evaporated milk
2 tablespoons butter, melted
4 large ripe peaches, mashed


Spray the bottom of your slow cooker with vegetable cooking spray.
In a large bowl, combine sugar, and baking mix, stir in eggs, vanilla, evaporated milk, and butter. Mix well.
Fold in peaches and pour into slow cooker and stir well.
Cover and cook on low for 6-8 hours, or on high for 3-4 hours.
Serve with vanilla ice cream.

Editors note: this fruit salad makes a great combination with Lasagna!

I usually serve this with a scoop of vanilla ice cream. As more of a light desert its great for Thanksgiving, Christmas, or Easter dinners.

2 cans (29oz) sliced peaches, drained
2 cans (29oz) pear halves, drained and sliced
1 can (20oz) pineapple chunks, drained
1 can (21oz) cherry pie filling
1 can (15 1/4oz) apricot halves, drained and sliced

In slow cooker combine the peaches, pears, pineapple and apricots. Then add the pie filling. Cover and cook on high for about 2 hours or until heated through.
